Apricot Chicken Wings

Chicken wings are one of those dishes that pleases just about everyone! I love making this version – it’s so flavorful and super easy to make.

Ingredients:

1 cup gluten free soy sauce
1 8 oz. jar apricot preserves, (preferably fruit juice sweetened)
2 tablespoons brown sugar
3-4 tablespoons rice vinegar
1/2 tsp. garlic powder
1/4 tsp. cayenne pepper (more if you like it spicy!)
2 tablespoons tapioca flour
3 pounds chicken wings

Combine the first 6 ingredients in a medium saucepan over medium heat until the sugar is dissolved; add the tapioca flour and continue cooking for 3 minutes.

Marinate chicken wings in sauce for 4 hours or overnight in the refrigerator.

Preheat oven to 375 degrees and bake on a lightly oiled baking sheet for 40 minutes, basting occasionally with accumulated juices.

Serves 4-6

This is a great recipe to make for a big football game weekend – or super bowl weekend because you can feed a big crowd! 🙂
