Egg-Free Pancakes

This recipe is a great way to use ground flax seed as an egg replacer.

All you have to do to make the egg replacer from flax is mix 1 tablespoon whole flaxseed with 3 tablespoons boiling water. Place the flaxseed in the bottom of a blender, cover with boiling water. Let sit for 5 minutes and then blend on the highest speed. This mixture will keep in the fridge for 2 weeks. 3 tablespoons equal one egg.

Ingredients:

2 cups GF flour blend
2 tablespoons GF baking powder
1/4 tsp. salt
1/4 tsp. ground nutmeg
1 1/4 cups club soda (at room temperature)
9 tablespoons of flax egg replacer
2 tablespoons agave syrup (may use honey)
4 tablespoons coconut oil, melted or other allowable oil
1/2 cup blueberries (optional)

Directions:

In a large bowl sift or whisk all the dry ingredients. In a medium bowl, whisk 1/2 of the soda water, egg replacer, agave syrup and coconut oil until blended. Add the balance of the soda water and gently stir. Do not over mix.

Heat a griddle with a small amount of oil. Pour 2-3 tablespoons (a ladle works well) onto the hot griddle and cook until the surface is covered with small bubbles that begin to pop (1 1/2 to 2 minutes). Turn the pancakes over and cook the other side for another minute or so.

This makes 4 (16-20 4 inch pancakes)

    • Can you have Chia seeds? I buy Chia from the bulk bin at Whole Foods, you can get 3-4 generous scoops for under 5 dollars.

      To make an egg replacer using chia, add 3 tablespoons water to 1 tablespoon chia seeds (you can leave the seeds whole, or grind them first in a blender). Let this mixture sit for 5-10 minutes. The mixture starts to become gel like and that recipe replaces 1 egg in recipes…

      If you can’t have chia, let me know and I’ll see if I can find another answer for you!
