Dear Sueson,

I am still shaken by the fact that you are moving! Although I am very happy for you in that you are so deserving of this dream-come-true for you and your husband, I am so disappointed that I have not had more time to "grow" with you. Since my first Naperville Whole Foods class with you just three weeks after my diagnosis in November 2011, you have inspired me to make the most of my situation. At 71 years, initially it was a shock that both frightened and saddened me.

Since then, I have learned much from many resources but none have affected me as much as my encounters with(and inspiration from) you. I am beginning to feel much more empowered but still have so many questions. I was prepared to talk with you at the Wheaton store which you needed to cancel and then, again, this past Tuesday when I learned that you were leaving.

Beyond those questions, having spent 20 years in Fundraising, Management, and Planned Giving with the Chicago Chapter of the Muscular Dystrophy Association at a Local, Regional, Divisional, and National level, I so now feel the need to get more involved with the nuts and bolts of research funding, mentoring, and public eduction programs for Celiac Disease. I had hoped Tuesday evening to invite you to lunch to discuss volunteer opportunities with U of C and now hope that you might be able to link me to someone at the U of C Celiac Disease Center, if you think that I might be able to be of service.

I know how busy you must be in preparing for your departure before the end of the month but I look forward to hearing from you at your earliest convenience. I wish you the very best in your new "job" (you will be GREAT!!!) and hope that you will be so very happy in your new home and surroundings!!! I also hope your new audience will appreciate you as much as so many of us in Chicagoland have and always will!!!

I will always hope and look for a new Gluten-Free segment on the Food Network featuring Master Chef Sueson Vess!

Best wishes and ultimate health always!

Fondly and with much gratitude,

Carole Kalus

On Breading : To bread fish and then bake,I use the bottom of the bag of broken corn chips to bread my Haddock, Salmon, etc. Of course fresh white corn chips will do fine. I use my Mother's old rolling pin and pressure roll the chips in all directions until fine. I also add a dab of cloves to the top after spraying with 'I can't believe it's not Butter Spray. When I pick up the Chip crumbs I am careful not to include the gobs of salt usually on the bottom of the bag.

White corn chips are usually Gluten Free, but, some are marked, some are not.

Hello Sueson, I have a son who is WFGF and has sensory issues. He has downs and autism also. I am looking for a good cook book or menu mailer that promotes healthy, but good tasting meals. I have cholesterol that is getting higher too, so I wondered what you would suggest. Let me know where I should start. Thank you!

I am dying to have your book, Gluten-Free & Dairy-Free Cooking, but I can't. Like so many others I want to read, this one isn't available anywhere online in Kindle format, not even at Amazon.

I have arthritis in my hands and can't hold paper print books anymore. Even if I could I have NO room to store all the books I buy and read.

Any suggestions how I can get this as an ebook, specifically I need to order it as a Kindle through Amazon? Do you have plans to release it in the future through Kindle?

THANKS SO MUCH for any help you can offer.

This could be something your daughter would like:

Another dipping sauce recipe is:
Apricot Dipping Sauce: REALLY easy:
Apricot Dipping Sauce Ingredients:
1 jar apricot or peach jam (fruit juice sweetened)
1 tablespoon lemon or lime juice
1 teaspoon horseradish
Mix all ingredients together and serve. Good with chicken fingers. Although good with many things. The little bit of horseradish cuts the sweetness and makes it quite good and NOT spicy.

Other things for dipping: Hummus, any homemade salad dressing and you can change flavors with various herbs and spices or guacamole.

The above article states gluten and dairy free. However, when one follows the link to C4C and looks at the FAQs, it states that C4C does contain some dairy. Is the FAQ correct? I have a grown daughter that is intolerant to a whole host of items and dairy is one of the more sensitive items. Her boy friend is in the same sitution but they have made great strides in trying out new meals and working with a restaurant in Scottsdale - Nourish. For some reason cutting out all meat in their diet along with gluten, dairy, yeast, and a list of other items has done wonders for them. So your gluten free/dairy free cookbook is of interest.
