Almond Snack Bars

I love making these because it’s so much easier to make than buying store-bought snack bars. One reason is you can’t control what goes into them – especially if you have to stay away from certain allergens and the second reason is it’s so more economical to make them yourself.

These are great to keep on hand as a quick snack to curb your hunger to the next meal. I hope you enjoy them!

 

Almond snack bars

Ingredients
  1. 2 tablespoons cocount oil or grapeseed oil
  2. 1/4 cup sugar
  3. 1/4 cup honey or agave syrup
  4. 1/4 tsp. gluten free almond extract
  5. 1 1/2 cups gluten free cornflakes (or buckwheat flake cereal)
  6. 1 cup dried fruit
  7. 1/2 cup toasted almond slice
Instructions
  1. 1n a 2 quart saucepan, combine oil, sugar and honey. Bring to boil over medium heat, stirring consistently. Reduce heat and simmer 3 minutes, stirring constantly. Remove from heat. Carefully stir in almond extract.
  2. Add cereal, dried fruit and almonds to syrup mixture, mixing until thoroughly coated. Press into an 8x8x2 inch pan coated with cooking spray. Let stand until firm. Cut into 2 1/2 inch bars.
  3. Store, tightly covered, at room temperature.
